Slow Cooker Chicken Burrito Bowls With Creamy Cilantro Lime Dressing

You know that restaurant that begins with a ‘Chi’ and ends with a ‘potle’? Yeah, you know the one! I love getting burrito bowls from there, but I also prefer to eat homemade food as much as possible – so I thought, why not recreate my favorite, only made healthier and super simple? Your slow cooker does all the work, and the dressing takes only a few minutes to make, this recipe really couldn’t get any easier! The dressing I use here is the same that I used for my guest post on stupideasypaleo.com, for my Tasty Taco Salad! The dressing is really what completes this meal, it’s SO good!

I made my burrito bowl as I would typically order it, with lettuce, pico de gallo, and avocado, adding my yummy dressing and plantain chips for crunch! Want to switch it up? You could easily make nachos using store bought plantain chips, or tacos using lettuce wraps, or the super easy and yummy tortillas from Stupid Easy Paleo! Happy cooking!

Chicken
  1. • 2 lbs boneless, skinless chicken thighs
  2. • 1 medium onion, diced
  3. • 1 bell pepper, seeded and diced
  4. • 1 cup diced tomatoes (fresh or jarred)
  5. • 6 garlic cloves, minced
  6. • 3 tbsp chili powder
  7. • 2 tbsp cumin
  8. • 1 tsp paprika
  9. • ½ tsp garlic powder
  10. • ¼ tsp cayenne pepper
  11. • 2 tsp salt
  12. • 2 tsp pepper
Dressing
  1. • 2/3 cup avocado oil
  2. • 1 egg
  3. • ½ tsp mustard powder
  4. • 1 tsp lemon juice
  5. • 1 ½ tbsp fresh lime juice
  6. • ½ tsp fresh garlic, minced
  7. • ¾ tsp salt
  8. • 2 ½ tsp cilantro, minced
Optional Ingredients (use as many as you’d like, or come up with your own!)
  1. Chopped lettuce
  2. Pico de gallo or salsa
  3. Avocado or guacamole
  4. Diced onion
  5. Sautéed onion and bell pepper
Instructions
  1. Add all of the chicken ingredients to your slow cooker, and stir well. Cook on low for 6-8 hours. Shred the chicken with two forks.
  2. When you’re ready to eat, let’s make the simple dressing! Place the oil, egg, mustard powder, lemon juice, garlic and salt in a tall container (I use a 2 cup Pyrex measuring cup). Place an immersion blender at the bottom and turn on. Once the mixture starts to blend together and become thick, move the immersion blender towards the top, until it is well blended. This should take less than a minute! Stir in the cilantro and lime juice.
  3. **FYI this recipe only works if you’re using an immersion blender. If you’re using a regular blender or vitamix, see below this recipe for directions.
  4. Add any ingredients you’d like to your burrito bowl, top with the chicken and cilantro lime dressing. Eat up!

**FYI this dressing recipe only works if you’re using an immersion blender. If you’re using a regular blender or vitamix, use the basic mayo recipe that can be found HERE. Then just add the cilantro, garlic, lime juice, and salt!

    i cannot wait to try your recipes once i go home. i just feel like i am so busy now with school (and not living in my own house) makes it really hard for me to become motivated to try new recipes! but eddie and i always make burrito bowls (they are one of our fav things!!!!!!) so i will be making this in july for sure xo

    I will definitely be making this dressing next time I make a burrito bowl type of thing. I have been adding an egg to pretty much any dressing or sauce lately. It makes it so creamy and delicious! I can’t wait to try this!

      I just made another batch of this dressing, it’s so good, I hope you love it too! Adding eggs to dressings is amazing! If only I’d known years ago how easy it is to make your own…although I still would have bought bottled dressings! haha ;)

    Whenever I make chicken breast in the crockpot and leave it in for 6 hours, it comes out sooooo dry. Any tips on how to make it not so dry?

      Hi Kristin! I always prefer using chicken thighs in the slow cooker, but if I do ever use chicken breasts I add chicken broth which helps a bit :)
