    You know I made these and LOVED them, they were so amazing! Light and fluffy with the perfect amount of sweetness – so good!! I gave one to a coworker and he gave them “10 out of 10” – and my hubby loved them too!! Pretty sure I will be making these all season long! Thanks for another awesome recipe! πŸ™‚

    Silly question and I am new to using coconut oil. Do you melt it or leave it solid? Would it be ok to substitute EVOO? Can’t wait to make these!

      Hi Sherry! Not a silly question at all πŸ™‚ If you’re using a food processor, you can leave the coconut oil solid, or slightly melted. If you’re mixing it by hand, I would melt it first. I think substituting EVOO may give the muffins a funny taste, but you could certainly try! If you don’t want to us coconut oil I would use palm shortening, ghee or butter. Hope that helps! πŸ™‚

    These are delicious- I made a triple batch this weekend and froze a bunch. The hubby & I have been loving breakfast this week! Your blog is such an inspiration and makes our transition into the paleo lifestyle soooo easy!

      Hi Kristen! I’m sure it would work great, I would just be sure to line the bread pan with parchment paper, as grain-free baked goods tend to stick. I’m not sure on the time it would take to bake, since I haven’t tested it myself, but I would keep the temp the same and just keep an eye on it. Hope that helps!
