30-Second Mayonnaise

I used to totally despise mayonnaise. That was until a few years ago when I finally tried making my own! Not only is it insanely easy to make, but it’s SO GOOD! The ingredients in most store-bought mayonnaise still freaks me out, so now I just make my own in less than a minute!

I use an immersion blender to make my mayonnaise, as making it in a regular blender not only takes much longer, but it’s also a hit or miss if it comes out correctly. If you don’t have one yet, I highly recommend picking up an immersion blender, as it’s one of my favorite kitchen gadgets! They don’t take up much room, are relatively inexpensive, and are so handy for homemade mayo, dressings, sauces, and soups!

I prefer to use avocado oil for the base of my mayonnaise as it’s a healthy fat and has a very light taste. I get my avocado oil from Costco for a great price, but if you aren’t able to find any you could use macadamia nut oil or light olive oil. I don’t recommend using extra virgin olive oil, as it will give your mayo a very bitter taste. Check back tomorrow for a delicious casserole recipe I’ll be sharing that includes this mayonnaise!

  1. Place all of the ingredients into a tall container (I use a 2 cup
  2. measuring cup). Place an immersion blender at the bottom and turn on. Once the mixture starts to blend together and become thick, move the immersion blender towards the top, until it is fully blended.
  3. Store in a sealed container in the fridge. The expiration date of the egg you used is the expiration date of the mayo!
