I still remember the days that my husband didn’t feel safe taking me too far from home, when my disease was really out of control, and I was ending up in the emergency room far too often. Since traveling is something that I wasn’t able to do for a while, I’m certainly not going to let my diet keep me from doing so any longer! HONEYED LEMON GINGER BLISS BALLS

Yield: 12 balls

All the goodness of a cup of healing, lemon ginger tea, but wrapped up in a bliss ball! These little snacks are sweet, tangy and immune boosting, thanks to the fresh ginger and lemon. They’re also easily portable for any flight, road trip, cruise or hike.

Ingredients

Instructions

  1. Place all ingredients into a food processor and pulse until the mixture is smooth, but stopping before the cashew turns into a nut butter.
  2. Using a small cookie scoop, scoop out balls of mixture and roll between your hands. Then roll the bliss balls through the extra shredded coconut.
  3. Place in the refrigerator for 5-10 minutes to firm up, then enjoy.
