Strawberry Lemonade Gummies

I receive daily emails from my lovely readers asking how they can begin to repair their gut, and I ALWAYS say “get some gelatin!” Not just any gelatin though, I only recommend the Beef Gelatin from Vital Proteins! It’s the only gelatin I use, as it comes from grass-fed, pasture-raised cows, and I’m a BIG believer that eating products from healthy animals makes for healthier humans. So, how do you get this gelatin in? Funny you should ask – how about these strawberry lemonade gummies! They’re perfectly tart and sweet, and incredibly easy to make!

Strawberry lemonade takes me right back to my childhood, as it was one of my favorite drinks in the summer time. Although I’m not so sure the kind I had as a kid actually contained real strawberries… or even lemons, haha! I thought, why not turn my childhood favorite drink into a really healthy gummy treat?! Gummies are now a favorite of mine, and a really easy and delicious way to get in your daily dose of gelatin!

If you saw my last post for my insanely popular Double Chocolate Power Cookies, you may be wondering, what’s the difference between Vital Proteins Collagen Peptides and their Beef Gelatin Collagen Protein? Both offer the same amino acids and nutritional benefits, but they are slightly different in their application, so they typically aren’t used interchangeably.

To put it simply, collagen peptides are easily mixed into cold or hot liquids, such as tea, coffee, smoothies, etc.. Beef Gelatin dissolves only in hot liquid and “gels” (or solidifies) in cold liquids. This makes it perfect for these strawberry lemonade gummies! Have you ever made a batch of bone broth that comes out looking like meat jello? That’s the gelatin from the bones, and it’s SO GOOD for you! If I have a batch of broth that doesn’t gel, I’ll usually add a scoop of Vital Proteins Beef Gelatin to my cup for an extra nutritional punch!

Just like Collagen Peptides, the Beef Gelatin is amazing for your gut, skin, hair, nails, joint and bone health. I can personally tell you that both the Collagen Peptides and Beef Gelatin have been a huge support in healing my own gut, my skin now glows because of it, and my nails and hair are so strong and grow SO fast! I think everyone should be getting in collagen and/or gelatin, but that’s just my personal opinion. 😉

These strawberry lemonade gummies are only made with 4 simple ingredients! I prefer these on the tart side, but if you’d like them a little sweeter, simply add more honey while blending.

Strawberry Lemonade Gummies


  • 1 ½ cups fresh lemon juice (approximately 12 medium lemons)
  • 2 cups strawberries, tops removed (approximately 16 medium strawberries)
  • ¼ cup honey
  • 6 ½ scoops Vital Proteins Beef Gelatin


  1. Place the gelatin in a small bowl and set aside. Grease an 8x8 pyrex dish with coconut oil.
  2. Place the lemon juice, strawberries and honey into your blender and blend until smooth. Pour the mixture into a medium sized saucepan.
  3. Heat up the strawberry lemonade mixture over medium low heat until bubbles begin to appear around the edges of the pan. You want the mixture to be hot so that the gelatin dissolves completely.
  4. Using a teaspoon, slowly add the gelatin to the pot, while whisking constantly. Be sure to not add too much gelatin at once, or else you’ll be left with clumps. Once all of the gelatin has been mixed in and has dissolved, turn off the heat.
  5. Pour the strawberry lemonade mixture into the pyrex dish. Place in your refrigerator for at least 2-3 hours, or until set. Cut into squares and enjoy!
