Greek Chicken Kabobs

A few weeks ago my hubby and I spent the day at the beach (Carmel, CA), and grabbed food from one of my favorite Greek restaurants in town, Dametra’s! This restaurant is a must visit if you ever find yourself in Carmel! The family that owns the restaurant and the employees are all so warm and welcoming, plus their food is incredibly delicious, and you won’t find any junky oils, as everything is cooked in olive oil! We both grabbed the Greek chicken kabobs, and they were SO good!

Ever since then, I’ve been craving Greek food, so I knew that I needed to re-create some of my own Greek chicken kabobs at home!

Although I prefer using fresh herbs for the marinade, I’ve also included directions for using dried herbs, if that’s what you would like to do! I topped these kabobs with my delicious dairy-free tzatziki sauce, which I have two versions of in my eBook, Get Sauced. The sauce is really what completes this dish!

Greek Chicken Kabobs

Ingredients

Instructions

  1. In a large non-reactive (glass or ceramic, not metal) bowl, combine all of the ingredients except for the chicken. Reserve a small amount of the marinade to brush the chicken while it’s cooking. Add the chicken to the marinade and stir well to coat. Cover the bowl and place in your refrigerator to marinate for up to 2 hours.
  2. Preheat your grill to medium-high heat. If you’re using wooden skewers, soak them in water for 30 minutes prior to cooking, to prevent them from burning.
  3. Thread the chicken onto the skewers. Place the kabobs onto the grill, and cook for 10-12 minutes, or until the chicken is cooked through and the juices run clear. Turn frequently and brush with the reserved marinade.
  4. Top with the tzatziki sauce (optional) and enjoy!
