Salted Caramel Coconut Chips

The only hard part about these salted caramel coconut chips was stopping myself from eating the entire batch before my husband got a chance to try them! They’re sooooo good! They have the perfect amount of sweetness with a touch of salt – my favorite flavor combo. Made with only 4 ingredients, using coconut flakes as the “chip,” they couldn’t be easier to make! These take only minutes to make, with really no clean up at all!

I have a brand new pudding recipe coming up next week that these salted caramel coconut chips would be perfect on! They also make a great snack by themselves, or even on a sweet/salty salad or baked sweet potato topping. The options are endless!

Instructions

  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Place the coconut chips in as thin of a layer as possible onto the parchment paper . Sprinkle the coconut chips with the remaining ingredients. Place the baking sheet on the center rack in the oven and bake for 4 minutes.
  3. Remove the baking sheet from the oven and toss the coconut chips to coat in the coconut sugar mixture and spread into a thin layer again. Bake for another 3-5 minutes, or until they begin to brown. Let cool on the baking sheet and then enjoy!
