With Halloween coming up this month, it’s the perfect time to make healthier versions of some of my favorite childhood sweet treats, as with my new recipe for these homemade ALMOND AWESOMES! (Similar to an Almond Joy!) 

I created these with just 5 simple ingredients, and made them so that you can easily gift them to friends and family as well!

This month, I’ve partnered up with San Francisco Bay Coffee to pay it forward to the people that have supported me along my journey. Being a blogger, companies are always sending me products to try. You’ll usually see a small percentage of what I receive, as I’m extremely particular about the companies that I work with and the products that I promote. San Francisco Bay Coffee sent me a box filled with their OneCup, along with an assortment of different mugs, cups and a t-shirt! I’m paying it forward to give away much of this to friends and family who have supported me along my journey! I’ll be gifting my extra boxes of One Cups and mugs to my parents, my in-laws and my friends who are staying at my house to take care of my pups while my husband and I are away in Vegas next week!

One of my favorite things about San Francisco Bay Coffee is that they give back so much to the community, making them an easy company to support. Everything they do has a much bigger mission behind it, than just creating the most delicious coffee, as it needs to be sustainable as well, both for the environment and the community.

Poverty is a real problem that can’t be ignored when you visit the towns and villages where much of coffee is grown. Through San Francisco Bay Coffee’s community aid program, they strive to end poverty that exists within the coffee community, all while improving the conditions on every single farm that they work with. Not only does this program help the community of farmers and co-op members, but it’s also restored thousands of acres of rainforest.

San Francisco Bay Coffee is always fairly traded, meaning that the coffee is purchased directly from farmers that they personally know, at prices that will sustain a high quality of life for the farmer, co-op members, and the workers on the farms, far into the future.

Ingredients

Instructions

  1. Line a baking sheet with parchment paper.
  2. Use a double boiler to melt the chocolate, or simply fill a saucepan with approximately 1” of water, and place a glass or metal bowl on top of the saucepan. The water shouldn’t touch the bottom of the bowl. Bring the water to a boil over medium-high heat, and add the chocolate chips to the bowl. Stir the chocolate with a spatula until melted.
  3. While the chocolate is melting, place the coconut, honey and sea salt into a small bowl and stir to combine.
  4. Use a spoon to place 16 small circles of chocolate onto the parchment paper. Spread the chocolate so that it’s the width of a tablespoon, as this will create the bottom of the candy. Use a tablespoon to scoop the coconut mixture and place it on top of the chocolate on the parchment paper. Repeat until you’ve used all 16 tablespoons of the coconut mixture.
  5. Place one almond on top of the center of each of the coconut mixtures. Spoon the remaining melted chocolate over the coconut/almond mounds. Place the baking sheet in your refrigerator for 15-20 minutes, or until the chocolate is completely set. Enjoy!

    These look so yummy!! Have you ever made them with maple syrup instead of honey? Do you think they would be as good?

      Hey Amy! I actually made these with maple syrup over the summer and they definitely are a little messier (since maple syrup is thinner than honey) but just as delicious! You can always try adding a little less maple syrup…but I didn’t mind the mess 😉 I hope you love them!
