Toasted Coconut Cashews

There’s this salad that I get at Urban Plates that has grass-fed steak, mango salsa and toasted coconut cashews on top, and ever since I had it for the very first time, I became obsessed with those cashews! They make the entire salad 10 times more delicious! I have no idea how they make their version, but I knew that I wanted to create my own so I could have them anytime I wanted!

I have a recipe for a Roasted Pumpkin & Apple Soup that these are PERFECT on! Actually, the soup is originally what I made these toasted coconut cashews for, but then I took a bite of the cashews by themselves…and I basically couldn’t stop eating them. That means they deserved their very own post! I even packed some to take with me on my flight last weekend, as when you’re on a plane for 5 hours, snacks are a MUST. Let’s be real, I take snacks on flights that are even an hour long. You can’t go wrong with always having delicious food with you!

These would make a great snack to have on hand for guests that come over during the holidays this year, as they’re really delicious and super easy to make! Feel free to swap the cashews out for just about any other nut – I bet this would be delicious with almonds as well!

Ingredients

Instructions

  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Place the cashews in a small bowl. Pour the melted coconut oil and honey on top of the cashews and stir well to combine. Add the coconut sugar and shredded coconut, and stir until everything is combined and the cashews are coated in the mixture.
  3. Pour the cashew mixture onto the parchment lined baking sheet. Using a spatula, gently spread the cashews into a single layer, but keeping them close together, so that the cashews are all touching. This will help them caramelize.
  4. Bake for 10-12 minutes, stirring the cashews halfway through, and then spreading them into a single layer again, so that the cashews are still touching.
  5. Once the cashews begin to turn golden brown, remove the baking sheet from the oven. Let cool completely and then break the cashew pieces up. Enjoy!!
