These Whole30 Instant Pot Tacos are not only super simple to make, but also packed with tons of flavor! They’ve been on repeat all summer long in my house, and now going into fall I have no plans of stopping! I’ve had them wrapped in lettuce as shown below, and also made into a giant taco salad. Taco salads are basically my life lately, but really, so is the Instant Pot.
My life has been extra awesomely scheduled lately as I begin new (SUPER EXCITING!) projects, so the Instant Pot has been a total lifesaver when it comes to eating real food. All I need is some protein and spices and I’m good to go! It’s basically like having a maid who cooks me dinner while I shower or do my work. Seriously, the Instant Pot is one of my absolute favorite kitchen appliances, and that’s saying a lot!
I topped these tacos with the Dairy-Free Sour Cream from my eBook, Get Sauced, which in my opinion, is even more delicious than regular sour cream!
