I’ve got a brand new recipe for you today for this Deconstructed Loaded Burger Bowl! I first shared this recipe with my newsletter subscribers a few months back, and they LOVED it!

With so many of you doing a Whole30 or 21-Day Sugar Detox this month, this is the perfect dish to make ahead so that you can have it on hand for easy meals throughout the week!

This Deconstructed Loaded Burger Bowl is a favorite of my husband who basically lives off of burgers while he’s at work. He works 48-hour shifts as a firefighter, and I love sending him with a big batch of this so that he has quick, delicious and healthy meals ready to go! He can also tell ya that this is delicious even eaten cold…as he’s used to coming back from calls to eat cold food. 😉

Deconstructed Loaded Burger Bowl

I made this Deconstructed Loaded Burger Bowl using the Special Sauce from my eBook, Get Sauced, but you can top this with any sauce that you love – my Chipotle Aioli, Barbecue Sauce or Ranch Dressing would all be amazing as well! Feel free to add any toppings that you love on your regular burgers – this recipe can be customized however you’d like!

Deconstructed Loaded Burger Bowl

Ingredients

    For The Burger Bowls:
  • 4-6 slices bacon, cut into ½” pieces (use compliant bacon if on a Whole30)
  • 2 red potatoes, peeled and cut into 1” cubes (or 1 medium yam/sweet potato)
  • 1 red onion, sliced
  • 1 cup sliced mushrooms
  • 1 lb ground beef
  • Sea salt , pepper and garlic powder
  • 2 cups cole slaw or any greens of your choice (I used a mixture of cole slaw and chopped romaine lettuce)
  • 1 tomato, diced
  • 1 avocado, diced

Instructions

  1. Heat a large pan over medium heat. Once hot, place the bacon in the pan and cook until crispy. Place the bacon on a clean plate and set aside, leaving the grease in the pan.
  2. Add the potatoes to the pan and cover with a lid. Stir the potatoes occasionally to be sure they aren’t burning, re-covering the pan each time. Once the potatoes are fork tender, uncover the pan and add the onion and mushrooms. Sauté until everything begins to brown. Place the mixture into a clean bowl and set aside.
  3. Crumble the ground beef into the pan and sauté until cooked through. Drain any extra grease from the pan. Add the potatoes, onion and mushrooms back into the pan and season generously with salt, pepper and garlic powder. Stir to combine.
  4. Divide the cole slaw/greens into 3-4 bowls. Place the ground beef, mushrooms, onions and potatoes on top of the coleslaw/greens. Add the diced tomato, avocado and top with the sauce of your choice. ENJOY!
