5-Ingredient Chocolate Chip Cookies (paleo & flourless!)

These 5-ingredient chocolate chip cookies are my favorite cookies EVER. They’re crispy and chewy on the outside and soft on the inside, and so ridiculously good!

Occasionally I’ll get the idea to create a new cookie, muffin, or some sort of yummy treat recipe, so I’ll get to work in the kitchen (typically late at night when my hubby’s at work), annnnnnnd it almost always turns out awful the first time around. Baking is wild…change one tiny ingredient and BAM, it’s entirely different!

Whenever this happens, half of me wants to throw in the towel, but the other (stronger/more stubborn…errr, depends how you look at it), absolutely refuses to give up.

So after 7 unsuccessful batches…I finally came up with these 5-ingredient chocolate chip cookies, annnnnd…

Imagine if I’d stopped with the first, very dry, fall-apart (not in a good way) batch of cookies? You’d never even have these 5-ingredient chocolate chip cookies!

My husband, Mike, claims these to be the BEST treat that I’ve ever made, and I’ve gotta agree! Not only the best, but they’re the EASIEST too! 5 ingredients? Uhhh..yes, please! Also, before you start counting…salt doesn’t count in the 5…cause salt is literally life.

These 5-ingredient chocolate chip cookies are not only heaven in bite-sized form, but they’re flourless, paleo-friendly, and so legit. Like, too legit to quit.

Mike also took these photos for me, and I gotta say, he nailed it!

I linked the raw cashew butter that I used to create these cookies, and after trying a few different brands, it’s still hands down my fave. If you use Thrive Market, you can find the cashew butter for even less there! I don’t suggest using roasted cashew butter, as the cookies will turn out completely different. I have no idea why, but when I tested it, my cookies didn’t flatten out like the raw cashew butter did.

You’ll also know that you’ve mixed the dough enough, once it’s no longer sticky (it won’t stick to your hands), so it’ll be easy to divide up into 12 cookies. There’s also no need to flatten these cookies, as they’ll flatten themselves right out as they bake.

Into double chocolate? You’ve gotta check out my recipe for Double Chocolate Power Cookies, which are also loaded with gut-healing collagen!

  1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
  2. Place all of the ingredients, besides the chocolate chips into a medium sized bowl. Stir until very well combined and a dough forms. Add the chocolate chips and stir until combined.
  3. Divide the dough into 12 balls, and drop them onto the parchment lined baking sheet.
  4. Bake for 13-17 minutes (mine took exactly 15) or until the bottoms of the cookies begin to brown and the center is completely cooked through. Let cool & ENJOY!

Hi Suzy! I haven’t tried these with an egg substitute so I’m not able to say what would work. I’d love to hear how they turns out if you do try it!

I just made these and I have to admit I was skeptical but OH MY GOSH! they are soooo good! Soft and chewy, full of flavor, exactly like a chocolate chip cookie should be.
