14 Healthy Cinco De Mayo Recipes

With Cinco De Mayo right around the corner, I’ve got tacos, burritos & enchiladas on my mind! Basically, three things that I could never get tired of, especially since Siete released their grain-free crunchy taco shells…GAME CHANGER! Back when I first changed my diet in 2013, I discovered that I didn’t do well at all with corn, which is pretty much a staple in Mexican foodThen, after eliminating corn for a few years, I tried it once again and found that now I do just fine with it! I still rarely eat it, as I recognize that I have a limit that my body does well with, but I do love being about to enjoy corn tortilla chips at a restaurant, or on vacation! It’s pretty amazing what healing my gut has done for my overall health, along with the foods that I can tolerate.

Layered Taco Casserole
