Annnnnd I meant to post this Eggnog Chia Pudding last week, but then Christmas snuck up, and you know how that goes! 😉 It’s all good though, this chia pudding is perfect for any time of year!
Today is actually a super special day, so it’s the perfect day to publish my very last blog post of 2015! Today is officially 13 years since the love of my life, my now husband, and I went on our first date! What a crazy whirlwind the past 13 years have been, I can’t imagine going through all of it without him by my side.
Much of the past 13 years were filled with doctors visits, hospitals, surgeries and everything in between. I had been in remission for nearly five years when we first met, but that all changed shortly after, as the medications I was taking began to stop working. As difficult as those experiences were, they helped us to grow incredibly close, as there were times when all we really had was each other. To me, life is meaningless without love!

Ever since I had a glass of legit eggnog last month at a holiday party, I’ve been wanting ALL THINGS EGGNOG! I really love chia pudding, so I figured, why not combine the two?! Eggnog chia pudding was born out of this idea, and it’s so delicious!
I prefer to use a combination of almond and coconut milk, so that one flavor doesn’t overpower the other, but feel free to use whatever milk works best for you! Happy Holidays and happy eating!
